Whole-cluster pressed and fermented with native yeast, then aged 8 months in neutral French oak, the 2025 Estate White comes from a dry year at 46% of normal rainfall, concentration from natural restraint rather than dehydration, and the estate's largest white bottling to date.
The 2025 Estate White is pale straw with brilliant clarity. Aromas of quince, white peach, and Asian pear are lifted by notes of lemon verbena, white flowers, fresh fennel, and delicate bee pollen, with subtle hints of oyster shell and sea spray adding a distinctly coastal character. On the palate, vibrant acidity frames layered orchard fruit over a finely textured mineral core. Grenache Blanc contributes quiet generosity through the mid-palate, Picpoul provides linear freshness, and Roussanne lends floral nuance and a silky texture without diminishing the wine's precision. The finish is long, saline, and distinctly mineral, leaving lingering impressions of preserved citrus, mountain herbs, and crushed shale.
2025 succeeded despite a dry year, just 11.07 inches of rainfall, because residual subsoil moisture from two wet prior seasons and the vineyard's fast-draining shale soils buffered the deficit without triggering real vine stress.

The 2025 Estate White returns Grenache Blanc to its largest share since 2022, at 59%, drawn from the variety's biggest crop in estate history. Picpoul provides linear freshness and a 12% share of Roussanne rounds the wine with subtle florals and a silky texture.

Cellar work is deliberately restrained. Whole clusters are pressed gently and only free-run juice is carried forward. Fermentation is initiated by native yeasts in neutral French oak barriques, with no malolactic conversion, and the wine ages on its lees in the same neutral oak before bottling without fining.
